PLEASE DON’T MISS OUT ON PANCAKE DAY!!!

So, it’s Shrove Tuesday aka PANCAKE DAY (my 2nd favourite food day of the year – after Christmas of course) this week, and I bet you’re thinking ‘what can I eat???!!!!’

Well, there’s no need to miss out! Although ‘pancake day’ as it’s affectionately known, is where our predecessors would have ‘one last feast’ before they fasted over Lent, and would use up all their ‘rich’ ingredients such as fat, sugar and eggs, we can make these devilishly tasty treats a whole lot better for ourselves than the flour, eggs, sugar, and copious amounts of Ben and Jerry’s, maple syrup, or strawberry sauce that have become customary with the day

So, here’s a couple of recipes that’ll allow you to still get on board the pancake vibe 🙂

Pancakes with yoghurt, honey and LSA
(PAGE 17 of my Hot To Trot Cookbook)

These are amazing!

Serves 2

Preparation time: 10 minutes
Cooking time: 20 minutes

• 1 cup rice flour
• 1 cup chickpea (besan) flour
• 2 eggs, free range and organic, beaten
• oat or rice milk
• greek yoghurt
• LSA
• 1 teaspoon honey
• organic butter/Coconut oil
• 1 teaspoon cornstarch free baking powder

Combine flours and baking powder thoroughly. Add eggs, milk and honey and mix well.

Heat pan with a little butter and place small amount of mixture in pan.
Cook on one side until bubbles begin to pop then flip. Cook until golden.

Serve with yoghurt and LSA. (crushed linseeds, sunflower seeds & almonds)

Other options are to eat with blueberries, bananas, strawberries or other fruit of your choice. Strawberries
remember have high levels of vitamin C as do Kiwi’s.

Feather-Light Pancakes For The Family

Ingredients

4 eggs
1 teaspoon baking powder
1-2 tablespoons cinnamon
¼ cup water
½ teaspoon celtic sea salt
1 ½ cup rice flour
2 cups plain, active-culture yogurt

Directions

Blend all ingredients until there are no lumps. Drop batter by spoon onto a lightly
greased (organic butter or coconut oil) griddle until 1 side bubbles. Flip pancakes and bake until golden
brown. Can be covered and chilled overnight. Top with fresh fruit and nuts.
Makes 30 to 40 pancakes.
So that”s a couple of recipes that’ll allow you to nail some pancakes later, you’ll have a tasty Tuesday.
